Vinification

During fermentation in conical stainless steel tanks, extreme care was taken to achieve an extraction that highlighted fresh and fragrant aromas, full colours, and smooth, elegant textures and tannins. Once the wine was separated from its skins at the end of fermentation, it underwent a complete malolactic fermentation in oak barrels to fully enhance the finesse and expressiveness of the aromas. The ageing process, which lasted approximately 12-14 months, then began and took place in 60-gallon French and Hungarian oak barrels, some new and some previously used.
